Happy Easter! #Vegan #MatzoBall #Soup Recipe Improved → Delish!

Matzo Balls:
1.5 C #Matzo Meal (Manischewitz)
1/3 C #EVOO
1/2 C Water
16 oz Silken #Tofu

Mix the above w/blender/bullet. I used my #NinjaUltima. Put in airtight container over night.

Next day:
Saute in #PressureCooker :
2 T EVOO
1 White #Onion Diced
4 #Garlic Cloves Minced
2 C Shredded #Carrots
1.5 C Sliced #Celery

Add:
10 C of Water
3 T #BetterThanBouillon #Chickenless #Bouillon (No #Chicken)
3 #BayLeaves 

Form Matzo Balls (2”). Add to soup base. Cover/lock and cook @ high pressure for 15 minutes. 

OR

If you do not have a pressure cooker, boil covered until Matzo Balls float. Reduce heat. Uncover. Devour.
